If you've ever sat next to a plate of jalapeño poppers and couldn't stop reaching for another, this pasta is the dinner-sized version of that moment.
And what's even better is that it's a one-pan affair that comes together in about half an hour.
It's great on its own or alongside grilled chicken or steak if you're feeding a crowd. Either way, expect leftovers to disappear before you're done with the dishes.
Why you'll love this jalapeño popper pasta
- It's cheesy, creamy and bursting with flavor!
- You can make it as mild or as hot as you want.
- It has all the elements that make a dish a real crowd-pleaser and it couldn't be easier to make.
What you'll need
Fresh jalapeños - Two small peppers give you a mild-to-medium kick. For a milder dish, scrape out the seeds and the white pith inside (that's where most of the heat lives); for a spicier version, leave them in.
Short pasta - It's best to use something with ridges and hollows to catch the creamy sauce. Cavatappi, rigatoni, penne, fusilli or shells all work beautifully here.
Bacon lardons - Smoked or unsmoked both work. I crisp them up in a hot pan, then add them back right at the end.
Garlic - Fresh is best, but if you don't have it, the jarred stuff also works.
Heavy cream - This is the rich base of the sauce. It's best to bring it close to room temperature before adding it to the pan.
Cream cheese - I use full-fat Philadelphia for the silkiest texture, but the low-fat version also works if you want to lighten things up a bit.
Cheddar - Using both mild and sharp cheddar gives the sauce real depth. Always grate your own from a block, because pre-shredded cheese is coated with anti-caking starch that won't melt as smoothly.
Panko breadcrumbs - I love using these Japanese-style crumbs because they toast up lighter and crunchier than regular breadcrumbs.
Parmesan - Freshly grated, as always. It makes such a difference!
Pro tip
Make sure you soften the cheese by leaving it on the counter for 20-30 minutes so it melts quickly in the sauce.
How to make cheesy jalapeño pasta
This is a quick overview with step-by-step photos. See the recipe card below for full ingredients and instructions.
Melt the salted butter and toast the panko breadcrumbs until golden, then stir in the grated Parmesan and set the topping aside.
Boil the short pasta until al dente, reserving about half a cup of the starchy cooking water before draining.
Crisp the bacon lardons in a large pan, then sauté the jalapeños and garlic in the rendered fat until softened and fragrant.
Simmer the heavy cream and whisk in the cream cheese over low heat until the mixture is perfectly smooth.
Melt the cheddar cheeses into the sauce until thick and glossy, then season with salt and pepper to taste.
Toss the pasta with the sauce and top with the crispy bacon and toasted panko.
Substitutions and variations
- You can substitute the bacon with chopped prosciutto, pancetta or some crumbled Italian sausage.
- Try a different cheese instead of cheddar - Monterey Jack is nice for a mild touch, and Pepper jack if you want to turn up the flavor and add a little bit of extra heat.
- Turn it into a bubbly casserole-style pasta dish. Tip the finished pasta into a baking dish, sprinkle the crunchy topping over the top, and bake at 200°C (400°F) for 10 minutes.
Helpful tips
- Most of a jalapeño's heat lives in the white membrane inside the pepper, not just the seeds. For a milder dish, halve the peppers lengthwise and scrape out both the membrane and the seeds with a spoon.
- Watch the panko closely because it goes from golden to burnt in about 30 seconds.
- Make sure the heat is low when adding the dairy to prevent the sauce from turning grainy.
What to serve with this creamy jalapeño pasta
- You can turn this into a more complete meal by serving it with grilled chicken or steak.
- It also works great with a side of garlic bread or sourdough to mop up all that cheesy sauce.
- Or keep in nice and simple by serving your jalapeño pasta with a crisp green salad.
Leftovers and storage
- Store any leftovers in an airtight container in the fridge for up to 3 days.
- The sauce thickens a lot as it cools, so when you're ready to reheat, do it gently in a pan over low heat with a splash of milk stirred in.
- If you're meal prepping, it's best to keep the crunchy panko topping separately in a container at room temperature and sprinkle it over fresh after reheating.
