This Creamy Chicken Chipotle Pasta is smoky, a little spicy and coated in a delicious sauce that clings to every piece of pasta. It’s also super easy to make, just perfect for a cozy weeknight dinner without fuss.
Bring a large pot of water to a boil, salt it generously and cook the pasta according to package directions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.

Meanwhile, heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken pieces and cook for 7-8 minutes until golden. Transfer to a plate and set aside.

In the same pan add the onion, red pepper and green pepper. Cook for 4–5 minutes until softened. Stir in the garlic and cook for 1 minute more.

Stir in the chipotle paste and tomato paste and cook for a further minute.

Pour in the chicken stock and bring to a simmer. Next, add the cream cheese and stir until melted and fully incorporated.

Add the cream cheese and stir well until completely melted, then blend the sauce until smooth.
Add pasta and chicken to the sauce, tossing well to coat. If needed, add a splash of reserved pasta water to loosen the sauce.
Adjust the seasoning to taste, garnish with fresh parsley and serve immediately.
