Creamy Crock Pot Chicken Spaghetti

This creamy crock pot chicken spaghetti is made in one pot — no boiling pasta separately! With tender chicken in a cheesy Rotel sauce, it’s a super easy dump-and-go family dinner.

Ingredients 
 

  • 1 can cream of chicken soup
  • 1 can Rotel undrained
  • 4 ounces cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup low-sodium chicken stock
  • 2 boneless skinless chicken breasts
  • 8 oz spaghetti broken in half
  • cups shredded cheddar cheese
  • A handful fresh parsley chopped

Instructions

  • Place the cream of chicken soup, undrained Rotel, cream cheese, garlic powder, onion powder, smoked paprika, salt, black pepper and chicken stock in the slow cooker. Stir well to combine.
    1 can cream of chicken soup
    1 can Rotel
    4 ounces cream cheese
    1 teaspoon garlic powder
    1 teaspoon onion powder
    ½ teaspoon smoked paprika
    ½ teaspoon salt
    ¼ teaspoon freshly ground black pepper
    1 cup low-sodium chicken stock
  • Add the chicken breasts to the slow cooker and submerge them in the liquid. Cover and cook on low for 4–6 hours, until the chicken is cooked through (165°F) and shreds easily.

  • Remove the chicken and shred it with two forks. Return the shredded chicken to the slow cooker and add the spaghetti. Stir well to make sure the spaghetti are submerged in the sauce.

  • Turn the slow cooker to high, cover, and cook for 20–30 minutes, stirring once or twice, until the noodles are just tender. Start checking at 20 minutes.
  • Stir in the grated cheddar until fully melted. Adjust the seasoning to taste, then sprinkle with fresh parsley and serve hot.

Notes

  • Shred the chicken while it’s hot because it’s much easier to do so. Use two forms or a hand mixer.
  • If you notice that the sauce has thickened too much, stir in a splash of warm chicken stock.
  • Don’t drain the Rotel because the liquid flavors the dish and helps cook the pasta.
  • To double, scale all ingredients, use a 6–8 quart slow cooker, and add a few extra minutes to the pasta cook time.
