Doritos Casserole

This cheesy Doritos casserole has layers of taco-spiced ground beef, sweet peppers and corn under melty cheddar and crunchy toasted Doritos for a fun family dinner that's ready in about 40 minutes.

Ingredients 
 

  • 1 tablespoon olive oil
  • 1 medium red onion diced
  • 1 medium red bell pepper diced
  • 1 medium green bell pepper diced
  • 1 pound ground beef
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • Salt and freshly ground pepper to taste
  • ¼ cup jarred jalapeños diced
  • 1 can diced tomatoes
  • ½ cup frozen sweetcorn
  • 2 cups shredded cheddar cheese divided
  • ½ cup sour cream
  • 4 cups Cheese or Nacho Doritos crushed

Instructions

  • Preheat the oven to 350°F.
  • Heat the olive oil in a large oven-proof skillet over medium heat. Add the red onion and both bell peppers and cook for 5-6 minutes until softened.

  • Add the ground beef and cook for 6-8 minutes, breaking it up with a spoon as it browns. Drain off any excess grease.

  • Stir in the chili powder, ground cumin, garlic powder and oregano and cook for 1 minute until fragrant. Season with salt and freshly ground pepper to taste.

  • Add the diced jalapeños, diced tomatoes and frozen sweetcorn. Stir to combine and simmer for 4-5 minutes until the mixture has thickened slightly.

  • Remove the skillet from the heat and stir in the sour cream and ½ cup of the shredded cheddar until well combined.

  • Top with the remaining 1 ½ cups of cheddar, then scatter the crushed Doritos evenly over the cheese.

  • Bake for 15-20 minutes until the cheese is melted and bubbly and the Doritos are golden and toasted. Let the casserole rest for 5 minutes before serving.

Notes

  • Crush the Doritos into big shards rather than fine crumbs so they toast instead of steaming.
  • If the chips start browning too quickly in the oven, loosely cover the dish with foil for the last few minutes.
