Ingredients

  • 8 ounces spaghetti
  • 5 oz pancetta or bacon
  • ½ lb ground beef
  • 3 medium eggs
  • ½ cup Parmesan cheese grated
  • Salt and freshly ground black pepper to taste

Instructions

  • Bring a large pot of water to a boil, salt it and cook the spaghetti al dente according to the directions on the package. Reserve 1 cup of pasta water before draining.
    8 ounces spaghetti
  • Meanwhile, heat a large skillet over medium heat and cook the pancetta until crispy. Remove it from the skillet and set aside.
    5 oz pancetta
  • In the same skillet, cook the ground beef for 7-8 minutes until browned. Drain any excess fat as needed.
    ½ lb ground beef
  • While the beef is cooking, whisk together the eggs and grated Parmesan cheese. Add a splash of pasta water to thin it out just a bit.
    3 medium eggs
    ½ cup Parmesan cheese
  • Once the beef is cooked through, add the cooked spaghetti and pancetta to the skillet and toss well to combine.
  • Turn off the heat, then pour the egg mixture over the pasta. Toss well until all the pasta is coated.
  • Serve immediately, with some extra grated Parmesan on top if you like.
