Ingredients 
 

  • 10 ounces short pasta penne, fusilli, rigatoni
  • 1 tablespoon olive oil
  • 1 medium onion finely diced
  • 2 large garlic cloves finely chopped
  • 1 pound ground turkey
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried rosemary
  • ¼ teaspoon red chili flakes
  • 2 tablespoons tomato paste
  • 3 cups tomato sauce
  • ½ cup chicken broth
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper to taste
  • 1 cup mozzarella cheese grated
  • 1 cup cheddar cheese grated
  • 6-8 fresh basil leaves

Instructions

  • Bring a large pot of water to a boil, salt it, and cook the pasta according to the instructions on the package until just al dente. Drain and set it aside (reserving a cup of pasta water for later).

  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the onion and cook for 3-4 minutes until softened, then stir in the garlic and cook for another minute.

  • Add the ground turkey to the skillet, breaking it up with a spoon. Cook for about 5 minutes until the turkey is fully browned.

  • Season with dried basil, oregano, rosemary, chili flakes, salt, and black pepper. Next, stir in the tomato paste and cook for 1 minute.

  • Pour in the tomato sauce, chicken broth, and balsamic vinegar, stirring to combine. Let the sauce simmer for 10 minutes until slightly thickened. Stir in half of the grated mozzarella and cheddar until melted.

  • Toss the cooked pasta with the turkey sauce, adding a splash of reserved pasta water or broth if needed to loosen it.
  • If not using an oven-proof skillet, transfer the mixture to a greased 9x13-inch baking dish. Sprinkle the remaining mozzarella and cheddar cheese evenly over the top.
  • Bake at 375°F (190°C) for 20 minutes, until the cheese is melted and bubbling. Broil for 2-3 minutes at the end for a golden, crispy top.
  • Remove from the oven and let it rest for a few minutes. Garnish with fresh basil before serving.
