Hot Dog Soup

Hot dog soup is an incredibly comforting and warming soup that you can easily throw together with just a handful of simple ingredients. The kids might ask for seconds!

Ingredients 
 

  • 1 tablespoon olive oil
  • 1 large onion diced
  • 1 large carrot diced
  • 3-4 celery stalks diced
  • 2 large garlic cloves finely chopped
  • 1 pound hot dogs cut into bite-size pieces
  • 1 pound potatoes peeled and cubed
  • 1 28 oz can crushed tomatoes
  • 2 cups chicken broth
  • A handful fresh parsley roughly chopped
  • Salt and freshly ground black pepper to taste

Instructions

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrot, and celery and cook for 5-6 minutes, stirring occasionally, until the vegetables soften.

  • Add the garlic and cook for another 30 seconds until fragrant.

  • Next, add the hot dogs and cook for 1-2 minutes, stirring occasionally.

  • Add the potatoes, crushed tomatoes and chicken broth. Bring the mixture to a boil, then reduce heat to low. Cover the pot with a lid and simmer for 20-25 minutes or until the potatoes are tender.

  • Stir in the fresh parsley and adjust seasonings with salt and pepper if needed.

  • Serve hot, garnished with extra fresh parsley if you like.
