Slow Cooker Chicken Sweetcorn Soup

Ingredients 
 

  • 1 medium onion diced
  • 2 medium carrots diced
  • 2-3 celery stalks diced
  • ¾ lb potatoes peeled and cubed
  • 1 ½ cup sweetcorn canned or frozen
  • 1 teaspoon Italian seasoning
  • 2 large garlic cloves finely chopped
  • ¼ teaspoon red chili flakes
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 chicken breasts
  • 4 cups chicken stock
  • ¾ cup cream cheese
  • 1 cup heavy cream
  • 3.5 oz. bacon or pancetta
  • cup Parmesan. grated
  • Fresh parsley to garnish

Instructions

  • Add the diced onion, carrots, celery, potatoes and sweetcorn to the slow cooker.

  • Next, add the Italian seasoning, garlic, red chili flakes, paprika, salt, and ground black pepper, and stir to combine.

  • Place the chicken breasts on top and pour in the chicken stock, making sure the chicken is submerged in the liquid.

  • Cook on High for 3.5 hours (or on Low for 6 hours).
  • Remove the chicken from the slow cooker and shred it with two forks.
  • Return the chicken to the crockpot and stir in the cream cheese and heavy cream until completely combined.

  • Cook for 20-30 minutes more on High.
  • Meanwhile, crisp the bacon or pancetta in a small pan.
  • Stir in the bacon and Parmesan, then taste to adjust the seasoning.

  • Garnish with fresh parsley and serve hot.
