Southern Smothered Cabbage

Southern smothered cabbage is what happens when a head of cabbage meets a pound of smoked sausage and a good pat of butter. Just one pot and you can have it on the table in 45 minutes!

Ingredients 
 

  • 1 pound smoked sausage sliced
  • 2 tablespoons neutral oil
  • 1 medium onion diced
  • 4 garlic cloves finely chopped
  • 1 tablespoon Cajun seasoning
  • 1 head cabbage sliced
  • ½ cup chicken broth
  • 2 tablespoons butter
  • Salt and freshly ground black pepper to taste

Instructions

  • Heat a large pot or Dutch oven over medium heat with no oil in it. Add the sliced smoked sausage and cook for 5-6 minutes until browned on both sides. Remove to a plate and leave the rendered fat in the pot.

  • Add the neutral oil to the same pot. Add the diced onion and cook for 4-5 minutes until soft, stirring and scraping the browned bits off the bottom.

  • Stir in the garlic and Cajun seasoning and cook for 1 minute until fragrant.

  • Add the sliced cabbage, then pour in the chicken broth, butter, and season with salt and pepper.

  • Cover and cook for 15-18 minutes, stirring every few minutes, until the cabbage is tender but still holding its shape. Add a splash more broth if the pot looks dry.
  • Uncover and return the sausage to the pot. Cook for 2-3 minutes until the sausage is heated through. Taste, adjust the seasoning and serve.

Notes

  • Taste before you add salt. Smoked sausage and Cajun seasoning blends are both heavily salted, and the amount varies a lot between brands.
  • Use the widest pot you have. Cabbage cooks down far better with room to move.
  • Serves 4 as a main course or 6 as a side dish.
