Spicy Alfredo Sauce

This Cajun-inspired spicy Alfredo sauce is the creamiest you’ve ever had and simply bursting with flavor! It’s also super simple to make for a cozy treat at the end of a busy day.

Ingredients 
 

  • 10 oz penne pasta
  • 5 oz spicy smoked sausage sliced
  • 2 tablespoons unsalted butter
  • 4 garlic cloves finely chopped
  • 2 cups half and half
  • 2 tablespoons taco seasoning
  • 1 teaspoon dried oregano
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • cup Parmesan grated
  • A handful fresh parsley finely chopped

Instructions

  • Cook the pasta in boiling salted water according to package directions until al dente. Reserve 1 cup of pasta water before draining.

  • Meanwhile, heat a non-stick skillet over medium-high heat. Add the sausage slices and cook for 3-4 minutes until nicely browned and slightly crispy. Remove the sausage from the skillet and set it aside.

  • Reduce the heat to medium and melt butter in the same skillet. Add the garlic and cook for 30 seconds until fragrant.

  • Pour in the half and half, then stir in the taco seasoning, oregano, black pepper, and salt. Simmer gently for 4-5 minutes, stirring occasionally, until the sauce thickens slightly.

  • Add the cooked pasta to the skillet and toss well to cover in sauce. Adjust the consistency with some of the reserved pasta water if needed. Stir in the cooked sausage and grated Parmesan and toss again to combine.

  • Finish with the fresh parsley, adjust the seasoning to taste and serve immediately.

Notes

  • Go easy on the salt initially because taco seasoning and smoked sausage both add saltiness. It’s always best to adjust at the end!
  • Watch the garlic closely so you don’t burn it as this will make the sauce bitter.
