Cowboy butter has become super popular served with steak, but when you use it to toss crispy chicken wings in it, it truly turns them into something amazing!
Most of the cowboy butter chicken wings recipes out there are grilled or deep-fried, but my version is made in the air fryer. This gives you super crispy wings without having to turn on the grill or use an oil bath.

What you'll need
- Chicken wings - split and with the tips removed. You can also buy them pre-cut if you can find them, it saves a job.
- Cornstarch - the secret to crispy skin in the air fryer.
- Seasonings - I use a mix of garlic powder, onion powder, smoked paprika, salt and black pepper to season the wings before air frying.
- Unsalted butter - the base of the whole thing. I use unsalted so I can control the salt, but salted works too. You might want to reduce the added salt, though.
- Worcestershire sauce - my not-so-secret backbone for a deep, savory note.
- Dijon mustard - for a little sharpness and tang.
- Garlic - fresh, minced. There's garlic powder in there too, but fresh garlic in warm butter is non-negotiable.
- Lemon juice and zest - for the brightness that keeps this sauce from feeling heavy.
- Herbs and spice for the butter - garlic powder, red chili flakes, smoked paprika, dried thyme and dried parsley build that classic cowboy butter profile.
- Capers - I like to add some finely chopped capers for that briny steakhouse pop. You can leave them out if they're not your thing.
Pro tip
Pat the wings completely dry with paper towels before you toss them in the cornstarch and seasoning. That's what makes them crispy!
How to make cowboy butter chicken wings

Pat the wings dry, then toss them with the cornstarch, garlic powder, onion powder, smoked paprika, salt and pepper until evenly coated. Arrange them in a single layer in a preheated 400°F (200°C) air fryer basket.
Cook the wings for about 12 minutes, then flip them and cook for another 10 to 12 minutes, until the skin is golden and crisp and the internal temperature hits 165°F (74°C).
While the wings cook, make the sauce. Melt the butter in a small saucepan over low heat, add the minced garlic for about 30 seconds until fragrant, then stir in the Worcestershire, Dijon, lemon juice and zest, garlic powder, chili flakes, smoked paprika, thyme, parsley and capers. Keep it warm.
Tip the hot wings into a large bowl, pour over the cowboy butter and toss until every piece is glossy and coated. Serve right away while they're hot and crispy.
Substitutions and variations
- You can swap the dried thyme and parsley for about a tablespoon each of fresh, stirred in right at the end.
- If you don't have fresh lemon, a splash of bottled juice works, though you'll miss the zest's punch.
- Dial up the chili flakes for more heat, or leave them out entirely for a kid-friendly batch. A dash of hot sauce in the butter is great too.
Helpful tips
- Cook the wings in a single layer, leaving a little space between them. Work in batches if you need to.
- Toss the wings in the butter the moment they come out of the air fryer. Hot wings drink up the sauce, and the residual heat helps everything cling.
- If you're cooking in batches, keep the finished wings warm in a low oven (200°F) and toss everything together at the very end.

- These are totally built for a game-day spread! Set them out with celery and carrot sticks, along with a bowl of ranch or blue cheese for dipping.

Leftovers and storage
- If you have any leftover wings, chop them off the bone and pile the meat into wraps or over a salad. That cowboy butter is too good to waste!
- Store leftover wings in an airtight container in the refrigerator for up to 3 to 4 days.
- To reheat, pop them back in the air fryer at 350°F (175°C) for a few minutes to bring the crisp back.
- You can freeze cooked, sauced wings in an airtight container for up to 2 months. Thaw overnight in the fridge, then re-crisp in the air fryer.
