Honey Garlic Roasted Potatoes are an easy side dish made with buttery baby potatoes, honey and plenty of garlic, all roasted until perfectly caramelised. Crispy on the outside and soft on the inside, they pair beautifully with everything from roast chicken to weeknight sausages.
Potatoes have got to be the best side dish in the world. You can roast them, mash them, fry them, smash them, and somehow they're always a good idea.
This honey garlic potato version is one of my go-tos when I want something easy that still feels a bit special.
The honey and butter melt into the potatoes as they roast, giving them the most gorgeous caramelisation, while the inside stays soft and fluffy and the outside turns perfectly crisp.
It's simple, comforting and exactly the kind of side dish that works with just about anything. We love them with pork and chicken in our home but they're also just perfect for the holiday table!

What you'll need
Potatoes - I like using baby potatoes here because they roast evenly and don't need peeling. Halving them is enough to get plenty of golden edges while keeping the centres soft.
Butter - Melted butter gives these potatoes a richer flavour and better browning than oil alone. I make sure it's fully melted so it coats every potato evenly when tossing.
Garlic - Always fresh garlic!
Honey - Runny honey is best because it distributes evenly when you toss the potatoes and caramelizes nicely.
Red chili flakes - Just for a bit of warmth, you won't actually get any heat from such a small amount.
Fresh thyme - This is a herb that works beautifully with potatoes and honey. I like to chop it finely so it spreads everywhere instead of sitting in little pockets.
Pro tip
Keep an eye on the color toward the end of roasting. If the potatoes browning faster than expected, give them a gentle stir once and return to the oven.
How to make honey garlic potatoes

Preheat the oven to 425°F / 220°C.
Toss the potatoes in a bowl with the butter, garlic, honey, chili flakes, thyme, salt and black pepper until well coated.
Place the potatoes in a baking dish or tray and roast for 30 to 35 minutes, turning once halfway through.
Remove from the oven when golden and tender, then let them sit for a minute before serving.
Substitutions and variations
- You can substitute the baby potatoes with Yukon Golds or red potatoes. Cut them into even chunks and they will roast at about the same rate.
- For a deeper sweetness, use maple syrup instead of honey.
- Stir in a handful of freshly grated parmesan as soon as the potatoes come out of the oven for a cheesy touch.
Helpful tips
- If your honey is thick, warm it slightly so it drizzles easily and doesn't clump on the potatoes.
- Each oven is different, so it's best to keep an eye on the potatoes towards the end so they don't burn.
- Let the potatoes rest for a couple of minutes before serving so the glaze thickens and clings better.
What to serve with honey garlic potatoes
These potatoes are super flexible and work with just about anything. I especially love them alongside simple, hearty mains where they can really shine.
They're perfect with chicken dishes like my air fryer marinated chicken thighs, chicken leg quarters or even something cosy like garlic mushroom parmesan chicken. The sweetness from the honey works so well with savoury, well-seasoned chicken.
For something a bit more casual, I like serving them with these air fryer steak bites or thin pork chops. Add a simple salad and dinner's done!
Leftovers and storage
- Store any leftovers in an airtight container in the fridge for up to 3 days.
- To reheat, the oven or air fryer works best if you want to bring back some of the crisp edges. Spread the potatoes out on a baking tray or in the air fryer basket and heat at 375°F/ 190°C until warmed through.
- I don't recommend freezing these potatoes. The honey and butter don't hold up well once thawed.

- For extra-crispy edges, parboil the potatoes until just tender, drain well and let them steam-dry for 10 to 15 minutes before tossing with the butter mixture and roasting.
- Watch the final 10 minutes closely. Honey can go from perfectly caramelised to too dark fast, so pull them when they're deeply golden and sticky.
